Spicy Marsala Veggie Burgers

I am always looking for a tasty healthy recipe that is budget friendly. One of my close friends recently shared with me a recipe that I knew I had to try after viewing the video just once. I have a very long history of eating veggie burgers. I think I had my first veggie burger back in the fourth grade, it was absolutely horrible. Veggie Burgers have come a very very long way since then. Having a healthier life-style has led plenty of people to become vegans or vegetarians. I have to admit, I have tried a number of veggie patties recipes made at home from scratch and some that where store brought. There are lots of great store-brought counter parts that are excellent, however some of the really great ones cost a very pretty penny. We all know a great way to stretch our dollar in the kitchen is to use potatoes. Buzz Feed-Tasty created a great recipe called Spicy Masala Veggie Burgers. If I had to rate it out five stars then I would give it 3.5 stars. Due to my own personal preference I excluded two items from the recipe the corn and edamame. I left out the corn because I have a enough experience to know I am never a fan of veggie burgers that have corn. I don’t usually buy edamame and hence wanted to see how the recipe would turn out sans edamame.  Again, I wanted to use this recipe because it is cost effective and can quickly be made. Edamame in my opinion is more of specialty item. Granted, I know that  leaving the edamame out the veggie patties cause them to not be as protein rich. I highly recommend you try out this recipe. The Spicy Marsala Veggies Burgers were easy to make. I will experiment in the future to see how well these patty freeze. You can check out the video to the recipe by clicking the recipe below.

Spicy Marsala Veggie Burgers  Serves: 6

Ingredients:
– 2 red potatoes
– 2 large carrots
– 1/2 bell pepper
– corn 1/2 cup
– edamame 1/2 cup
– oats 1/2 tsp
– ginger 1/2 tsp
– turmeric 1/2 tsp
– garam masala 1 tsp
– mustard seed 1/4 tsp
– cayenne pepper 1/2 tsp
– garlic 2 cloves
– olive oil 1 Tbsp.
– salt 1/2 tsp
– 1 Tbsp oil

Finely chop two red potatoes, and two large carrots. Sauté in a little oil for a few minutes. Add the bell pepper, corn, and edamame. Continue to cook until the potatoes are soft.
In a food processor, grind the oats until they are a grainy powder. Add the veggies, and spices. Blend.
Shape the mixture into patties, and fry, grill, bake, or freeze them for later!
Enjoy with toppings of choice!
